Plum cake
Topped with slices of bright red peak-of-season plums, this gorgeous cake is a sight to behold – you would never think that it’s so easy to put together!

Plum cake

Servings: 4-6

Ingredients

1 box NOMU minimakes Vanilla Cake Batter Mix
2 large eggs
80g unsalted butter, melted and cooled
¼ cup full-cream plain yoghurt
2-3 red plums, thinly sliced

Directions

Preheat your oven to 160°C. Grease and line a 20cm springform cake tin with baking paper.

Whisk the eggs for until foamy, then whisk in the melted butter and yoghurt until well combined. Add the cake mix and whisk to form a smooth batter.

Pour the batter into the prepared cake tin, then neatly arrange the plum slices on top of the batter.

Bake for 25-30 minutes or until a skewer inserted into the center comes out clean. Allow to cool completely in the tin before removing.

Tip: Nectarines or peaches (or even a combination of stone fruit) will also work well in this recipe. Serve this cake for pudding slightly warmed with double thick cream.
