Peanut butter-filled brownie cups
Filled with creamy peanut butter and finished with sea salt flakes, these salty-sweet brownie bites are delicious treats for those late-night cravings.

Peanut butter-filled brownie cups

Makes: 20

Ingredients

1 box NOMU minimakes Chocolate Brownie Batter Mix
60g unsalted butter, melted 
2 large eggs, beaten  
1/3 cup smooth peanut butter, softened in the microwave
2 tbsp peanuts, finely chopped
Flakey salt, to garnish

Directions

Preheat the oven to 160°C (fan-assisted convection) and generously grease a 24-hole mini muffin tin.

Whisk the butter and sugar (sachet 1) together, then mix in the eggs one at a time until well combined. Add the brownie mix (sachet 2) and stir to form a smooth batter.

Fill the mini muffin holes three-quarters full with batter and bake for about 10 minutes – the brownies should have formed a crust but still be soft in the middle. Set aside to cool.

Press down the center of each brownie bite to form a cavity – a tot glass, clean cork or something similar in shape will do the trick. Fill the cavities with peanut butter and finish with a sprinkling of chopped peanuts and flakey salt.

Tip: Allergic to peanuts? Swap out the peanut butter for your favourite nut butter.
