ORGANIC ROOT VEGETABLES WITH HONEY & THYME
HONEY ICE CREAM WITH GRILLED PINEAPPLE
A gastronomic adventure for anyone with a sweet tooth!

HONEY ICE CREAM WITH GRILLED PINEAPPLE

Servings: 8

Ingredients

10 pumps NOMU Vanilla Paste
500ml cream
500ml milk
120g honey
8 egg yolks
100g caster sugar
A pinch of NOMU Sea Salt
200ml double cream

PINEAPPLE:
1 tbsp NOMU Sweet Rub
1 pineapple, sliced into chunky pieces
1 tbsp butter
1 tsp sunflower oil

Directions

Place the Vanilla Paste, cream and milk in a large saucepan and bring to a boil. Remove from the heat and add the honey. Beat the egg yolks and sugar together in a separate bowl until thick and creamy and whisk into the cream mixture. Cook over medium heat until the mixture thickens enough to coat the back of a wooden spoon.

Add a pinch of Sea Salt, then pour the mixture into a chilled metal bowl and allow to cool. Cover and place in the fridge until very cold. Stir in the double cream and freeze for 1 hour. Remove and beat until aerated. Repeat until frozen. Alternatively, use an ice cream machine which is much easier!

When the ice cream is ready to serve, sprinkle the NOMU Sweet Rub over the pineapple slices. Gently heat the butter and oil in a griddle pan and grill the pineapple until charred and caramelized on both sides and slightly softened on the inside.

Serve the warm pineapple with scoops of honey ice cream.
