Rack of lamb (8 chops), trimmed
NOMU Extra Virgin Olive Oil
1 tbsp NOMU Lamb Rub or Roast Rub

Preheat the oven to 180°C.
Trim the chops of most of the fat and clean the bones. Drizzle with Olive Oil and season with salt and Lamb or Roast Rub.
Heat an oven-proof pan on high heat and sear the chops on both sides until nicely browned. Place the pan in the preheated oven for 5-10 minutes until cooked to your liking.
Remove the pan from the oven and allow to rest for 5 minutes before serving with potato mash and your child’s favourite vegetables!
Tips: For a crunchy parmesan crust, combine 1 cup fresh breadcrumbs with ½ cup finely grated parmesan and 1 tbsp softened butter in a bowl. After you’ve seared both sides of the lamb chops in the pan, top each one with bread crumbs and place under a preheated grill in the oven until golden and crunchy.
