CRANBERRY & ALMOND OATMEAL SQUARES

Makes: 15 squares

Ingredients

1 x NOMU Oatmeal Cookie Baking Kit
125g unsalted butter, softened
1 large egg, lightly whisked
100g dried cranberries
100g toasted almonds, roughly chopped
1/2 cup desiccated coconut
15ml honey, warmed

Directions

Preheat your oven to 180°C. Lightly grease and line a 23 x 23cm baking tray.

Using an electric mixer, beat the butter on high speed until pale and creamy. Add the egg and beat until combined. Add the NOMU Oatmeal Cookie mix, cranberries, toasted almonds, desiccated coconut and warm honey, and bring together to form a dough.

Using your hands, lightly press the cookie dough into the prepared baking tray or simply shape it straight onto baking paper.

Bake for 20 minutes and cut into bars or squares while still warm. Leave to cool before serving.
