BUTTERNUT & CINNAMON WRAPS
These tasty wraps are quick and easy to prepare, and are perfect for kids lunchboxes.

BUTTERNUT & CINNAMON WRAPS

Makes: 1 large or 2 small wraps

Ingredients

½ cup butternut, cut into small cubes
1 tsp NOMU Sweet Rub
NOMU Extra Virgin Olive Oil
1-2 flour tortilla wrap
¼ cup feta, cubed
½ cup baby spinach leaves
1 tbsp hummus
1 tbsp plain yoghurt
1 tbsp raisins
1 tbsp sunflower seeds
1 tsp NOMU One for All Rub

Directions

Preheat the oven to 180°C.

Spread out the butternut on a baking tray and sprinkle with the NOMU Sweet Rub. Drizzle with Olive Oil and bake in the oven for 20 minutes or until soft and slightly caramelized. Keep warm and set aside.

Place the tortillas in the oven just long enough to warm them through without drying out. Remove and place on a plate.

Using a spoon, spread the hummus down the middle of the tortilla. Add the warm butternut, feta, raisins, sunflower seeds and baby spinach leaves. Drizzle with yoghurt and sprinkle a teaspoon of NOMU One for All Rub over the top. Fold the tortilla into a wrap and cut in half.

Serve with a sweet chilli sauce for dipping fun!
