APPLE, OAT & CINNAMON CRUMBLE

APPLE, OAT & CINNAMON CRUMBLE

Servings: 6

Ingredients

Filling:
6 large tart apples
2 tbsp lemon juice
100g coconut sugar
1 tbsp NOMU Sweet Rub

Crumble:
120g cake flour, sifted
60g coconut sugar
100g coconut oil, melted
100g rolled oats
NOMU Sweet Rub, to dust

 

Directions

Preheat the oven to 200°C.

Peel and core the apples and cut them into bite-size chunks. Place into a heavy-based saucepan with the remaining filing ingredients and leave to cook, stirring occasionally. The apples are ready when they have slightly softened, but still retain their shape. Remove the saucepan from the heat and place the apples and any juices in a clean bowl to cool.

For the crumble, combine the flour and sugar in a mixing bowl or food processor. Add the coconut oil and either rub it into the flour with your fingertips or pulse in a processor until combined and a fine crumble has formed. Add the rolled oats last and mix until well combined.

Spoon the apples and juices into 6 small or 1 large baking dish until they are filled to just below the rim. Sprinkle a generous layer of the crumble over the apples and then sprinkle a little NOMU Sweet Rub over the top just before going into the oven. Place onto a foil-lined baking tray and bake for 15-25 minutes, or until the crumble is golden and crispy.

Serve hot with some vegan ice cream, coconut cream or coconut yogurt.

Tip: The foil-lined baking tray catches any juices that may spill out the crumble during cooking and makes for easy cleaning.
