500g ripe but firm strawberries
60g caster sugar
3 tbsp good quality balsamic vinegar

Rinse and hull the strawberries to remove stalks and pith. Leave the smaller ones whole and halve them if larger.
Place in an even layer on a roasting tray and sprinkle with the sugar. Splash evenly with balsamic vinegar and Vanilla Extract. Toss gently to combine the flavours.
Roast in the oven for about 10 minutes, or until the fruit has softened but still holds its shape. Bottle up in clean sterilised glass jars.
