FILLET BÉARNAISE

SMOKED SALT & THYME ROLLS

Servings: 6 rolls

Ingredients

500g bread flour
10g instant yeast
1 tbsp white sugar
1 tsp NOMU Smoked Salt or Sea Salt
1 tbsp NOMU Thyme
400-500ml warm milk
1 egg, beaten

Directions

To make the dough, combine the flour, yeast, sugar, NOMU Smoked Salt, and thyme in a large bowl. In a separate bowl, beat the egg into the warm milk (the milk shouldn’t be too hot as this will kill the yeast) and add to the flour mixture, stirring to combine. Work the dough until it comes together, tip out onto a floured surface and knead for a further 10 minutes until it becomes smooth and elastic.

Place the dough in a greased bowl, cover with cling wrap and allow to rest for approximately 1 hour or until it has doubled in size.

Once the dough is ready, preheat the oven to 180°C and line a baking tray with baking paper. Form 6 medium-sized balls and place them on the prepared baking tray. Brush each ball of dough with a little milk and season with more Smoked Salt, alternatively, place a whole sprig of fresh thyme on each roll.

Place the rolls in the oven and bake for 20 minutes until golden brown and cooked through. Remove and serve warm with butter.

Tip: Great to serve with a fresh soup in winter
