Chocolate funfetti party cake

Makes: 1 cake

Ingredients

1 box NOMU MiniMakes Chocolate Cake Batter Mix
2 large eggs
80g unsalted butter, melted and cooled
1/2 cup (125ml) milk

Chocolate buttercream:
80g butter, softened
2 tbsp NOMU Cocoa Powder, sifted
120g icing sugar, sifted
1-2 tbsp milk
Funfetti sprinkles, to decorate

Directions

Preheat the oven to 160°C. Grease and line a 20cm square cake tin with baking paper.

Whisk the eggs until foamy, then whisk in the melted butter and milk until well combined. Add the cake mix and whisk to form a smooth batter.

Spread the batter in the prepared tin and bake for 25-30 minutes or until cooked through when tested with a skewer. Set aside to cool.

Meanwhile, prepare the icing by creaming the butter until pale and smooth using an electric mixer. Add the cocoa powder and beat until well combined. Mix in the icing sugar in two batches, alternating with the milk, mixing well between each addition to form a smooth and creamy buttercream.

Spread the icing on top of the cooled cake and decorate with funfetti sprinkles. Cut into squares and enjoy!

Tip: This tray bake can be cut into 16 small or 9 large squares.
