150g fresh cherries, pitted
1 tbsp sugar
100ml vodka
Crushed ice
1L soda water
Thin slices of lemon or lime, to serve
Place the cherries in a saucepan and sprinkle with the sugar. Simmer for 5 to 10 minutes, until the cherries start releasing their juices and the sauce becomes syrupy. Remove the compote from the stove and allow to cool to room temperature, then transfer to the fridge to chill.
Spoon 1 tablespoon of the cherry compote into the bottom of a martini glass and carefully pour 30ml vodka over the top.
Add crushed ice and top up with soda water.
Garnish with lime/lemon slices and enjoy!
