APPLE & CINNAMON HOTCAKES

Makes: 20 hotcakes

Ingredients

1 NOMU Pancake and Waffle Kit
2 large eggs, lightly whisked
1 cup (250ml) milk
1/4 cup (60ml) sunflower oil
2 apples, peeled and grated
2 tsp NOMU Sweet Rub 
Fresh raspberries, to serve
Maple syrup, to serve

Directions

Empty 2 x sachets of Pancake and Waffle mix into a mixing bowl. Whisk the eggs, milk, and oil together and add to the dry mix. Whisk until smooth. Add the grated apple and Sweet Rub and stir until combined.

To cook the hotcakes, heat a large non-stick frying pan over medium heat. Brush the pan with a little bit of melted butter and spoon 1-2 tablespoon measures of the mixture into the pan. Cook the hotcakes for two minutes on one side or until little bubbles appear on the surface. Flip over and cook for a further minute until evenly golden.

Serve with raspberries and drizzle with maple syrup.
