Vegan-friendly without compromising on flavour, these moreish vanilla blondies show the magic of minimakes!

Vegan vanilla blondies

Makes: 8 squares

Ingredients

1 box NOMU MiniMakes Vanilla Blondie Batter Mix
50g coconut oil, melted
1/4 cup (60ml) soy milk

Directions

Preheat the oven to 160°C (fan-assisted convection) and line a 21 x 11cm loaf tin with baking paper.

Whisk the melted coconut oil with the sugar (sachet 1), then whisk in the soy milk until well combined. Add the blondie mix (sachet 2) and stir to form a smooth batter.

Spread the batter evenly in the prepared tin and bake for 25-30 minutes or until cooked through but still gooey in the center.

Allow to cool before removing from the tray and slicing.
