SPICED SWEET POTATO HOTCAKES

Ingredients

250g sweet Potato (orange/purple)
120 g flour of choice
1 tsp baking powder
200ml plant-based milk of choice
1 Tbsp maple syrup
1 tsp NOMU Baking Spice
½ tsp NOMU Vanilla Extract
2 Tbsp Coconut oil, for frying

Topping Tips: blueberries, banana, coconut yogurt, maple syrup, nuts/nut butter
Flour suggestions: almond flour, gluten-free flour, buckwheat flour, coconut flour

Directions

To prepare your potatoes, preheat the oven to 180°C.  Wash, peel, and cube your sweet potato. Roast for 30–40 minutes, or until soft (you are able to slide a knife through the cubes). Set aside to cool.

Once the sweet potato has cooled, blend all the ingredients together. Add the flour and mix until you have a batter.

Heat a pan and add the coconut oil. Dollop the mixture into the pan and spread to your desired size. When bubbles start to form the surface of the hotcake flip over and cook until golden brown on both sides.

Serve warm with a drizzle of maple syrup, a sprinkle of  NOMU Baking Spice, and toppings of your choice.
