ORANGE & MAPLE CHOCOLATE FRENCH TOAST

Ingredients

3 jumbo eggs
100ml milk
100ml cream
1 tbsp NOMU Sweet Rub
8 slices white bread
100g NOMU Organic Dark Baking Chocolate, melted
40g butter
Extra NOMU Sweet Rub for serving

SAUCE:
150ml maple syrup
100ml orange juice

Directions

To make the sauce, place the maple syrup and orange juice in a small heavy-based saucepan and caramelize together until thick and syrupy. set aside to cool.

Whisk the eggs, milk, cream, and  NOMU Sweet Rub in a medium-sized mixing bowl. Coat a slice of the bread with melted NOMU Organic Dark Baking Chocolate and dip into the egg mixture.

Soak another slice of bread in the egg mixture, place on top of the NOMU Organic Dark Baking Chocolate, and press down gently.

Heat half the butter in a large non-stick heavy-based frying pan and place the prepared bread in the pan. Cook for 3 minutes on each side until golden in colour. Remove from the pan, slice into fingers and serve immediately with an extra sprinkling of NOMU Sweet Rub and a generous drizzle of burnt orange sauce.
