CHOCOLATE & TAHINI VEGAN COOKIES

Makes: 15-20 Cookies

Ingredients

120g coconut oil at room temperature
120g tahini
100g white sugar
60g brown sugar
55g plant-based milk of choice
1 tsp NOMU Vanilla Extract
250g all-purpose flour
1 tsp salt
1/2 tsp baking powder
1/2 tsp baking soda
100g NOMU Baking Chocolate 
NOMU Flaked Sea Salt

Directions

Preheat the oven to 180˚C and line a tray with baking paper.

In a medium bowl, mix together your flour, baking soda, baking powder, and salt.
In a large bowl, combine your softened coconut oil, tahini, and both sugars. Beat with a mixer until light and creamy (2 minutes). Add the plant-based milk and vanilla extract and beat until combined
Add the flour mixture to the wet mixture and beat on low until everything is combined. Add NOMU Baking Chocolate to the mixture and stir until combined.
Roll balls of dough and press down with a fork to flatten about 5cm apart on your baking tray. Sprinkle with NOMU salt flakes before placing them in the oven.
Bake the cookies for 11 – 13 minutes or until the edges begin to brown. Remove from oven and let cookies cool for about 10 minutes. Use the tray again to bake the remainder of the cookie dough.
