Half a watermelon
Juice of 2 lemons
60ml Bombay Sapphire Gin, or more
2 cups crushed ice, or more
Generous handful of fresh mint
Remove the seeds from the watermelon. Place the watermelon, gin and lime juice in a hand blender and blend for one minute.
Gently bruise the mint to release the aromatics by clapping between your hands a few times.
Add the crushed ice and serve with fresh mint.
Tip: You can swap out the gin for other booze, like rum, or leave it out entirely for a non-alcoholic refresher.
