SWEETLY Chocolate Granola (wheat-free, sucrose-free, vegan)

INGREDIENTS
2 cups rolled oats (gluten-free if possible)
2 cups of your favourite raw nuts, roughly chopped (almonds, pecan nuts, cashews)
½ cup coconut flakes 
2 tbsp hot water
¼ cup SWEETLY Sugar Substitute
¼ cup honey or maple syrup (or double up on Sweetly Sugar Substitute)
¼ cup coconut oil, melted 
3 tbsp NOMU Cocoa Powder
1 tsp NOMU Vanilla Essence or NOMU Vanilla Extract
1 tsp NOMU Cook's Collection Ground Cinnamon
½ cup chopped dried fruit such as dates (optional)
Your favourite natural yoghurt to serve
Extra honey or maple syrup to drizzle
Berries to serve
DIRECTIONS

Preheat oven to 170°C

In a large bowl, mix the oats, nuts and coconut flakes.

In a small saucepan, melt the SWEETLY Sugar Substitute in the hot water. Add the honey (or maple syrup) and coconut oil and heat till runny and syrupy. Whisk in the cocoa powder, cinnamon and vanilla until smooth and well combined. Pour over the oats mixture and mix everything really well until evenly coated.

Spread evenly onto a baking sheet and place in the oven for 20-30 minutes, stirring every 10 minutes to make sure the edges don’t burn. Once it is golden brown and crunchy, remove from the oven and allow to cool completely. It will crisp up even more as it cools. Once cooled stir in any chopped dried fruit if you wish.

Serve with double thick plain yoghurt, seasonal berries & additional honey to taste.

Tip: Store in a sealed container for up to one month.
