Cauliflower & Butter Bean Soup

INGREDIENTS
1 tbsp unsalted butter
1 medium onion, diced
1 small clove of garlic, crushed
600g cauliflower florets, broken into smaller pieces
1 large potato, peeled and finely diced (optional)
2 tbsp NOMU Vegetable Stock
1 litre boiling water
1 tin (400g) butter beans, drained & rinsed
¼ cup (60ml) fresh cream
NOMU Sea Salt
NOMU Black Pepper
DIRECTIONS

Melt the butter in a large pot over a medium heat. Add the diced onion and garlic and sweat the onions until soft and translucent.

Add the cauliflower and potato and gently sauté for 2 minutes while stirring. Add the NOMU Vegetable stock to the boiling water. Stir well and add to the vegetables.

Add the butter beans, bring to the boil then reduce the heat and simmer for 20 minutes until the cauliflower and potato are very tender.

Carefully pour the soup into a blender or food processor and blend until smooth. Alternatively, purée with an immersion blender.

Return the soup to the pot and stir in the cream. Reheat if necessary and season to taste with NOMU Sea Salt and NOMU Black Pepper.

Serve hot with freshly baked NOMU Farm Style Bread and butter.
